Berry season is here, and I have two new salad recipes to share this week.

Both feature fresh summer berries and come together quickly as a side dish or a light lunch. πŸ“πŸ«

If the idea of fruit in a savoury salad sounds a little odd, don't worry. The berries actually add a nice pop of sweetness that balances out the other flavours really well.

Summer Kale Salad


This massaged kale salad has fresh blackberries and strawberries, crunchy cashews and sunflower seeds, and a honey Dijon dressing. Ready in 20 minutes.

Berry Spinach Salad


This baby spinach salad has strawberries, raspberries, blueberries, creamy goat cheese, and roasted pecans, tossed in a homemade raspberry vinaigrette.

How to store fresh berries


Before storing, remove any mouldy berries and discard them. Keep the rest in a clean, dry container with a piece of paper towel at the bottom to absorb moisture. If you bought them in a plastic clamshell, they can stay in that. Rinse well right before eating.
