🥗 Two healthy and delicious salads (without lettuce)

Hi Reader,

I hate to admit it, but I'm not a big fan of lettuce-based salads. Never have been.

But a veggie-loaded salad with potatoes? Pass the plate!

This week I've freshly updated my Tuna Nicoise Salad recipe, and it's one of my favourite meals to make in the summer.

I acknowledge that a traditional Nicoise doesn't include boiled vegetables (and some people feel very strongly about this), but this version follows in the footsteps of cooks like Julia Child, who popularized the addition of potatoes and green beans.

I love the creaminess that new potatoes bring, and the snap of barely cooked green beans makes this salad fun to eat.

The recipe is flexible, too. Not a fan of anchovies? Leave them out of the dressing. Love radishes? Add them!

If you already enjoy Nicoise salads, hit reply and let me know what you usually add to yours!

Tuna Nicoise Salad

A hearty composed salad with creamy potatoes, jammy eggs, crisp green beans, and a bright lemon vinaigrette. On the table in under an hour.

Cooking Tip!

For the best texture and flavour, choose canned tuna packed in olive oil rather than water.

Another Tasty Summer Salad

Greek Salad

This delicious, easy-to-prepare Greek salad recipe brings together crisp cucumbers, juicy tomatoes, and tangy Kalamata olives in a simple dressing made right in the bowl.

That's all for today.
Have a great weekend,

⭐️ P.S. If you make any of my recipes, I'd appreciate it if you could leave a quick comment and star rating on the blog post. Your review will help others find and enjoy these recipes too!
